Lentil & Split Pea Soup with a bit of Easter Ham

Ingredients:
1 small onion, chopped
3/4 cup green lentils
3/4 cup split peas
1/2 cup basmati rice
8 cups broth (I use vegetable due to Thomas’ allergy, but beef or chicken will have more flavor)
4-6 cups of water – wait to add as needed
salt to taste (I’m not sure how much I used, I kept putting it in until the flavor was right)
1+ teaspoon pepper
*Can also add 1 1/2 cups ham or sausage

Directions:
Saute onions with olive oil until lightly browned.
Rinse lentils, split peas, and rice under cold water & add to onions.
Add broth and bring to a boil (add water as needed).
Simmer for 40 minutes or until lentils and peas are done.
Add salt and pepper.
Serve with fresh parm, mmm.

    Yum…I miss split pea soup. I grew up on it but my redneck from Kentucky doesn’t like peas..did ya ever hear of such?

    Wow – this looks great! My husband and I love split pea soup as well as a lentil sidedish that I make. Putting both together is a great idea. Also, I wish we didn’t just finish the Easter ham tonight! I’ll have to try this recipe.
