Lentil & Split Pea Soup with a bit of Easter Ham

5 Apr

1 small onion, chopped
3/4 cup green lentils
3/4 cup split peas
1/2 cup basmati rice
8 cups broth (I use vegetable due to Thomas’ allergy, but beef or chicken will have more flavor)
4-6 cups of water – wait to add as needed
salt to taste (I’m not sure how much I used, I kept putting it in until the flavor was right)
1+ teaspoon pepper
*Can also add 1 1/2 cups ham or sausage

Saute onions with olive oil until lightly browned.
Rinse lentils, split peas, and rice under cold water & add to onions.
Add broth and bring to a boil (add water as needed).
Simmer for 40 minutes or until lentils and peas are done.
Add salt and pepper.
Serve with fresh parm, mmm.

Yum…I miss split pea soup. I grew up on it but my redneck from Kentucky doesn’t like peas..did ya ever hear of such?

Love this type of soup, especially with the basmati rice.

This looks delicious! I actually never tried split pea soup until I was an adult. Yum!

Wow – this looks great! My husband and I love split pea soup as well as a lentil sidedish that I make. Putting both together is a great idea. Also, I wish we didn’t just finish the Easter ham tonight! I’ll have to try this recipe.

Thanks! I’m making it again this week without the ham. But that Easter ham, mmm!

What a great idea, adding green lentils to your split pea soup! Will definitely give it a try, seeing as I have a left-over ham in the fridge. Thanks for yet another visit.
